Lemon Squares:
Bottom Layer:
1/2 cup butter
1 cup flour
1/2 cup chopped pecans
1 tsp. Watkins Butter extract
Cream Layer:
1 cup powdered sugar
8 oz. fat free or light cream cheese (at room temperature)
1 tsp. Watkins Vanilla Extract
Half of a 1 quart/liter container of whipped topping
Lemon Layer:
1/2 pie filling recipe from Watkins Lemon Dessert Package
1 tbsp. lemon juice
Combine bottom layer ingredients and pack into an 11x7"/28x18cm baking pan. Bake at 375 degreed for 15 minutes. Cool completely.
Cream together powdered sugar and cream cheese. Add whipped topping, extract and fold in. Prepare lemon pie filling; add lemon juice and let cool.
Spread a thin layer of cream mixture over baked bottom layer. Spread lemon filling on top; spread rest of cream mixture on top of that. Chill (note: chilling after applying lemon layer may make it easier to spread top layer.) Cut into large squares. |

Herbed Pork Tenderloin with Oven Roasted Potatoes:
1/4 cup Watkins Garlic and Parsley Grapeseed Oil
2 tsp. Watkins Organic Rosemary
2 tsp. Watkins Organic Thyme
1 tsp. Watkins Organic Garlic Powder
1/2 tsp. Watkins Organic Black Pepper
2 whole pork tenderloins
2 red or yellow peppers quartered
2 1/2 lbs. new potatoes, halved or quartered
Watkins Sea Salt
Combine oil, rosemary, thyme, garlic powder, and pepper. Coat tenderloins with about 3 tbsp. herb mixture. Place in shallow roasting pan. Toss peppers and potatoes with remaining oil. Place around meat. Roast at 425 degrees for 20 minutes. Turn pork, potatoes, and peppers. Reduce roasting temperature to 375 degrees and continue to roast for 15 minutes, or until meat thermometer reads 155 degrees F and the pan juices run clear. Let stand 5 minutes; slice. Sprinkle with coarse ground sea salt. |

Bacon and Onion Stuffed Mushrooms
24 whole snow cap mushrooms
Watkins Original Grapeseed Oil
2 tbsp. Watkins Bacon and Onion Snack and Dip Seasoning
8 oz. cream cheese, softened
2 tbsp. chopped chives
Remove stems from mushrooms; brush caps with oil. Stir seasoning into cream cheese; fill opening where mushroom was removed with mixture. Bake on cookie sheet at 350 degrees for 10-15 minutes. Remove from oven; sprinkle with chives. Makes 24. |

Apple De-Lite
Ingredients
1/4 cup/60 mL Watkins Vanilla Dessert Mix
1/2 cup/60 mL apple juice, divided
8 cups/2 liters peeled, cored, and sliced apples
2/3 cup/160 mL brown sugar
2 tsp/10 mL Watkins Apple Bake Seasoning
Watkins Cooking Spray
1/2 cup/125 mL all-purpose flour
2 tbsp/30 mL cold butter or margarine
1 to 2 tbsp/15 to 30 mL cold water
1 tsp/5 mL sugar
Dash Watkins Purest Ground Cinnamon 6 oz.
Cooking Directions
Preheat oven to 425ºF/220ºC. Combine Vanilla Dessert Mix and 1/4 cup/60 mL apple juice in small mixing bowl; set aside. In large kettle, add remaining apple juice, apples, brown sugar and Apple Bake Seasoning. Bring mixture to a boil over medium heat and cook 10 minutes. Stir Dessert Mix mixture into apples and cook until thickened. Pour into 8-inch/20-cm square baking dish sprayed with Watkins Cooking Spray; let cool while preparing crust.
Place flour in bowl and cut in butter with pastry blender or two forks until mixture resembles coarse meal. Sprinkle with enough water, stirring with fork, until dough begins to leave side of bowl. Shape into a ball and flatten between plastic wrap to a 4-inch/10-cm circle. Chill 15 minutes. Roll out to an 8-inch/20-cm square between plastic wrap. Cut into strips and place lattice-fashion on top of apple mixture. Combine sugar and cinnamon and sprinkle over crust. Bake for 30 to 35 minutes or until mixture begins to bubble around edges.
